Kayla’s Stuffed Peppers
Ingredients
- 2 lbs Nebraska Star Beef® Prestige® Ground Beef
- 6 Bell Peppers any color
- 1/2 Onion yellow or white
- 1 small can Tomato Paste
- 1 can Petite Diced Tomatoes
- 1/2 can Water (from small can of tomato paste)
- Mozzarella Cheese
- Nebraska Star Beef® Signature® Salt + Pepper Seasoning to taste
- Nebraska Star Beef® Signature® SPG Seasoning to taste
Instructions
- Pre-heat oven to 425° F. Wash and dry all produce. Halve bell peppers lengthwise; remove stems and seeds. Place on foil covered baking sheet and drizzle each half with oil; rub to coat. Season with NSB Signature® Salt + Pepper. Roast until browned and softened, 18-20 minutes.
- (Optional) Heat a drizzle of oil in a large pan over medium heat. Add onion and cook, stirring, until softened, 4-5 minutes.
- Add Prestige® beef; season with NSB Signature® SPG. Cook, breaking up meat into pieces, until browned and cooked through, 4-5 minutes. Drain grease from hamburger.
- Stir tomato paste and diced tomato into pan with beef mixture until thoroughly combined. Add water approx. 1/2 of the small can of tomato paste. Simmer until slightly thickened, 1-2 minutes.
- Once bell peppers are done, remove from oven and stuff each half with as much filling as will fit. Place back on baking sheet. Sprinkle evenly with mozzarella.
- Bake stuffed peppers until cheese has melted, 3-4 minutes.
