Nebraska Star Beef is known for offering a consistent, high quality steak at a fair price. We are pleased to announce that we’ve added a dimension to our business. This new project – Small Batch, Hanger Aged Beef – delivers the best old school production has to offer with the convenience of having it shipped direct to your door. We’ve traded economies of scale for creative control. This means we have “taken the gloves off” with regard to aging and steak cutting processes; the end result being a focus on larger, bone-in steaks meant to be served family style.

Why? Because family is our focus – creating the opportunity to connect with family and friends around a memorable steak that’s as good as the conversation around it.

To kick things off, we are stepping out of our comfort zone and wading further into the waters of dry aging. Dry-aging is not new to us, but in the past we’ve used this combination of dry (extended time on the hanger) and wet aging in order to achieve a steak reminiscent of what we knew growing up in Nebraska – tender, well marbled beef, that was spared the deep earthy tones often associated with steaks dry aged in a cabinet for a considerable length of time – similar to the cheese aging process.

This beef has been dry aged for 21 days – just long enough to achieve exceptional tenderness and a concentrated flavor profile through strategic moisture loss, with the end result being steak, roasts and ground beef truly worthy of your special occasions.
