Osso Buco has become our “go-to” cut for making soup and pretty much any other braised beef dish. The amazing combination of collagen, bone broth and delicious beefy flavor is simply unattainable with other cuts, and the price is right. Osso Buco would be good on a smoker, but make sure and smoke it on a drip pan, as the marrow and collagen drippings are the ultimate base for sauces and side dishes.
