Picanha is a cut that seems to be experiencing its “dawn of popularity” in the American market. It has been a staple on Brazilian and Spanish plates for centuries tho. It is a very versatile cut, arguably the most tender part of the Top Butt primal. It sits atop the top butt and is approximately 2lbs. It can be cooked and sliced for a family style service, or sliced into steaks and grilled like any other steak. The flavor is fantastic and the texture is very tender. We don’t recommend cooking beyond a Warm Rare - 120° F internal temp.
