This is Nebraska Star Beef interpretation of the famous Bistecca alla Fiorentina in Tuscany Italy. This cut is as close as it gets here in the states. Much like Johnny Cash’s cover of NIN’s “Hurt” sometimes “different” actually ends up being better somehow… if you love steak and enjoy taking the time to prepare the ultimate family style steak, look no further. Like all of our Small Batch cuts, it has been hanger aged 21+ days and hand cut and trimmed.
