Aging is an absolutely critical element to overall quality. That is why each of our steaks are first aged on the hanger, then at least another 35 days of wet aging. We raise all of our cattle with an old-fashioned corn finish so our beef is exquisitely marbled, juicy and tender. There is simply no better way to get a beef ready for market than corn.
