Given the nature of the steaks in the Small Batch, Hanger Aged line up, you have probably noticed the 6oz Top Sirloin is on the small side. The reason is, it’s just too good of a cut to put in the grinder, but it is cut a bit thinner, so go easy on the seasoning and make sure to cook on very high heat for a very short time.
