We do an “old school” break on our Small Batch carcasses. This means we do a lot of bone in cuts. Leaving the bones in steaks is definitely not the easy way of doing things, but we believe it makes a better product. Our Bone-In NY Strip steaks are cut thick - 24oz - which makes them easier to cook to the perfect internal temperature, 117° F, which helps to ensure an outstanding on-the-plate performance every time.
