Sweet Potato Filling
240ozCans Yamsdrained
1cupSugar
1tspVanilla Extract
2largeEggs
1/2cupUnsalted Buttermelted
Streusel Topping
1 cupLight Brown Sugarpacked
1/2cupAll-Purpose Flour
1cupPecansmedium chopped
1/2cupUnsalted Buttermelted
Instructions
Preheat oven to 375 F. Butter a 9 x 13 pan and set aside.
In a large bowl, combine the canned sweet potatoes, sugar, vanilla, eggs and melted butter. Beat with an electric mixer for about 4-5 minutes, until fluffy and smooth.
Pour mixture into your ban and bake for approx. 25 minutes.
Prepare streusel topping by combining brown sugar, flour, pecans, and melted butter in a small bowl. Mix with a fork and set aside.
Sprinkle the baked sweet potato mixture with streusel and return to oven for about 10-15 minutes until crumble is lightly browned. Serve immediately or cover with foil and serve in 30 minutes.
