Instant Pot Chili

Ingredients

  • 2 lbs Ground Beef or Loin Tips
  • 2 cups DRY Beans (pinto, kidney, black, navy, etc.)
  • 4 cups Water
  • 2 large Tomatoes diced
  • 1 large Onion diced
  • 2 large Anaheim Peppers chopped
  • 1 or 2 Habanero or Jalapeno Peppers chopped - if desired
  • 1 head Garlic peeled and chopped
  • 4 tbsp Chili Powder
  • 2 tbsp Crisco or Butter
  • 1 tbsp Cumin
  • Salt (to taste)

Instructions

  • Melt crisco or butter and brown burger or loin tips. It is not necessary to fully cook the beef at this point, just get it nice and caramelized. Add 4 cups of water and 2 cups of dried beans. Add Onion, Garlic, Peppers and Tomatoes. Cook on “High” pressure for 35 minutes on the “Meat/Stew” setting.
  • Once the cook time has ended, allow ample time (15-20 min) for cooker to decompress before releasing pressure.
  • Open, add dry ingredients and simmer for 10 to 15 minutes before serving.
