Humans have been eating bone marrow since before recorded history. Nebraska Star Beef "Marrow Bones" are the femur bone from the beef that have been split in half and are ready to thaw and roast. Marrow is often utilized by gourmet restaurants as an appetizer, typically served with really nice (and crunchy) bread. Marrow can also be rendered just like tallow and used in a similar fashion as tallow for frying, but is also a great addition to soups and broths.
